  • 1 cup Strawberries hulled and sliced
  • 1 cup Blueberries
  • 1 cup Raspberries
  • 1 Orange peeled and segmented
  • 1 Red Apple cored and diced
  • 1 Kiwi peeled and sliced
  • 1/2 cup Grapes halved (red and green)
  • 1/4 cup Pomegranate Seeds optional
  • 2 tablespoons Lemon Juice
  • 1 tablespoon Honey or Maple Syrup optional, to taste

Method
 

Instructions
  1. Gently wash all fruits under cold running water.
  2. Prepare the fruits: hull and slice strawberries, peel and segment the orange, core and dice the apple, peel and slice the kiwi, and halve the grapes.
  3. In a large bowl, combine all the prepared fruits.
  4. In a small bowl, whisk together the lemon juice and honey or maple syrup (if using).
  5. Pour the lemon juice mixture over the fruit and gently toss to combine. Be careful not to bruise the fruit.
  6. Taste and adjust sweetness if needed. Add more honey or maple syrup if desired.
  7. Serve immediately for optimal freshness or chill in the refrigerator for up to 2 hours before serving.

Notes

For a creamier fruit salad, add a dollop of plain Greek yogurt or coconut cream before serving. You can also add other fruits like mango, pineapple, or cantaloupe to customize your rainbow!
