- Gently wash all fruits under cold running water.
- Prepare the fruits: hull and slice strawberries, peel and segment the orange, core and dice the apple, peel and slice the kiwi, and halve the grapes.
- In a large bowl, combine all the prepared fruits.
- In a small bowl, whisk together the lemon juice and honey or maple syrup (if using).
- Pour the lemon juice mixture over the fruit and gently toss to combine. Be careful not to bruise the fruit.
- Taste and adjust sweetness if needed. Add more honey or maple syrup if desired.
- Serve immediately for optimal freshness or chill in the refrigerator for up to 2 hours before serving.
Notes
For a creamier fruit salad, add a dollop of plain Greek yogurt or coconut cream before serving. You can also add other fruits like mango, pineapple, or cantaloupe to customize your rainbow!
