  • 1/4 cup olive oil
  • 2 tbsp Dijon mustard
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion finely chopped
  • 1/2 cup bell pepper diced
  • 1/4 cup fresh parsley chopped
  • Salt and pepper

Method
 

  1. Step 1: Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Add your choice of pasta (8 oz) and cook according to the package instructions until al dente. Once cooked, drain the pasta in a colander and rinse it under cold water to stop the cooking process and cool it down.
  2. Step 2: Prepare the Dressing: In a large mixing bowl, combine 1/4 cup of olive oil, 2 tablespoons of Dijon mustard, 2 tablespoons of fresh lemon juice, and 1 teaspoon of lemon zest. Whisk together until the mixture is smooth and well combined.
  3. Step 3: Add the Ingredients: Once the pasta is cooled, add it to the bowl with the dressing. Then, toss in 1 cup of halved cherry tomatoes, 1 cup of diced cucumber, 1/2 cup of finely chopped red onion, 1/2 cup of diced bell pepper, and 1/4 cup of chopped fresh parsley. Use a spoon or spatula to gently toss everything together until the pasta and vegetables are evenly coated with the dressing.
