Ingredients

For the Strawberry Rhubarb Jam
  • 2 cups strawberries hulled and chopped
  • 2 cups rhubarb chopped
  • 4 cups granulated sugar
  • 1/4 cup lemon juice
  • 1/2 teaspoon vanilla extract
  • 1 package (1.75 oz) fruit pectin

Equipment

  • Large Pot
  • Wooden spoon
  • Measuring Cups and Spoons
  • Canning Jars
  • Jar Lifter
  • Funnel
  • Boiling Water Canner or Large Pot

Method

  1. Step 1: Prepare the fruit: Start by hulling and chopping the strawberries. For the rhubarb, trim the ends and chop them into small pieces. This ensures even cooking and helps release the natural juices. Combine the strawberries and rhubarb in a large pot.
  2. Step 2: Cook the fruit: Place the pot over medium heat and cook the strawberry and rhubarb mixture for about 10 minutes, stirring occasionally.
  3. Step 3: Add sugar and lemon juice: Stir in the granulated sugar, lemon juice, and vanilla extract. Bring the mixture to a rolling boil.
  4. Step 4: Incorporate fruit pectin: After the mixture reaches a boil, add the fruit pectin and continue to boil for another 1-2 minutes.
  5. Step 5: Remove from heat: Once the jam has thickened, remove the pot from heat and skim off any foam.
  6. Step 6: Fill the jars: Using a funnel, pour the hot jam into sterilized jars, leaving about 1/4 inch of headspace.
  7. Step 7: Seal the jars: Place the lids on the jars and screw on the metal bands until they are fingertip-tight.
  8. Step 8: Process the jars: Submerge the jars in a boiling water bath for 5-10 minutes.
  9. Step 9: Cool and store: Remove the jars from the water bath and allow them to cool completely.

Notes

Making your own jam allows you to control the sweetness and ingredients, making it a healthier alternative to store-bought options.
