- Step 1: Begin by bringing a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. This usually takes about 8-10 minutes. Once cooked, drain the spaghetti and set it aside. Reserve a cup of pasta water.
- Step 2: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant.
- Step 3: Stir in the chopped sun-dried tomatoes and let them cook for an additional 2-3 minutes.
- Step 4: Pour in the heavy cream and bring to a gentle simmer, allowing it to thicken slightly for about 5 minutes.
- Step 5: Add the fresh spinach to the skillet and cook for about 2 minutes until wilted.
- Step 6: Season the sauce with salt and pepper to taste.
- Step 7: Add the cooked spaghetti to the skillet, tossing gently in the sauce until well coated. If the sauce is too thick, add a splash of the reserved pasta water.
- Step 8: Plate the spaghetti and top generously with grated Parmesan cheese. Serve immediately.
