Ingredients

For the Spaghetti & Spinach with Sun-Dried Tomato Cream Sauce
  • 8 oz spaghetti The heart of this dish, providing the perfect base for the creamy sauce.
  • 2 cups fresh spinach Adds vibrant color and essential nutrients.
  • 1 cup sun-dried tomatoes chopped
  • 1 cup heavy cream Creates a rich and creamy sauce.
  • 2 tbsp olive oil For sautéing garlic and enhancing flavors.
  • 2 cloves garlic minced
  • Salt and pepper
  • Grated Parmesan cheese

Equipment

  • Large Pot
  • Colander
  • Large skillet
  • Wooden spoon or spatula
  • Measuring Cups and Spoons
  • Grater
  • Serving Plates

Method

  1. Step 1: Begin by bringing a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. This usually takes about 8-10 minutes. Once cooked, drain the spaghetti and set it aside. Reserve a cup of pasta water.
  2. Step 2: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant.
  3. Step 3: Stir in the chopped sun-dried tomatoes and let them cook for an additional 2-3 minutes.
  4. Step 4: Pour in the heavy cream and bring to a gentle simmer, allowing it to thicken slightly for about 5 minutes.
  5. Step 5: Add the fresh spinach to the skillet and cook for about 2 minutes until wilted.
  6. Step 6: Season the sauce with salt and pepper to taste.
  7. Step 7: Add the cooked spaghetti to the skillet, tossing gently in the sauce until well coated. If the sauce is too thick, add a splash of the reserved pasta water.
  8. Step 8: Plate the spaghetti and top generously with grated Parmesan cheese. Serve immediately.

Notes

Store any leftovers in an airtight container in the refrigerator for up to three days. Reheat on the stovetop or in the microwave, adding a splash of water or cream to bring the sauce back to life.
