Instructions
  1. In a large bowl, combine the sliced cucumbers, chopped tomatoes, red onion (if using), fresh dill, and fresh parsley.
  2. In a small bowl, whisk together the red wine vinegar, olive oil, salt, and pepper.
  3. Pour the dressing over the cucumber and tomato mixture.
  4. Gently toss to combine, ensuring all vegetables are coated in the dressing.
  5. Taste and adjust seasonings as needed, adding more salt, pepper, or vinegar to your preference.
  6. Let the salad sit for at least 15 minutes to allow the flavors to meld. This step is optional, but recommended.
  7. Serve chilled or at room temperature. Garnish with extra fresh herbs if desired.

Notes

For a creamier dressing, add a tablespoon of plain Greek yogurt or sour cream. Feel free to experiment with other herbs like basil or mint. Adding feta cheese crumbles would also be a delicious addition.
