  • 2 large eggs
  • 2 teaspoons vanilla extract

  • 1 cup cocoa powder
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
For the Peanut Butter Layer
  • 1 cup creamy peanut butter
  • 0.5 cup powdered sugar
  • 1 teaspoon vanilla extract
For the Salted Caramel
  • 1 cup granulated sugar
  • 6 tablespoons unsalted butter
  • 0.5 cup heavy cream
  • 0.5 teaspoon sea salt
For the Chocolate Topping
  • 1 cup semi-sweet chocolate chips
  • 2 tablespoons vegetable oil

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C). Grease and line a 9x13-inch baking pan with parchment paper.
  2. Step 2: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Step 3: Beat in the eggs one at a time, then mix in the vanilla extract.
  4. Step 4: Sift together the all-purpose flour, cocoa powder, baking powder, and salt. Gradually add to the wet ingredients, mixing until just combined.
  5. Step 5: Spread the batter evenly in the prepared baking pan.
  6. Step 6: Bake the base for 20-25 minutes, or until a toothpick inserted comes out clean. Allow to cool completely in the pan.
  7. Step 7: In a medium bowl, combine creamy peanut butter, powdered sugar, and vanilla extract. Mix until smooth, then spread over the cooled brownie base.
  8. Step 8: In a saucepan over medium heat, melt granulated sugar until deep amber, then whisk in butter, heavy cream, and sea salt. Allow to cool slightly before pouring over peanut butter layer.
  9. Step 9: In a microwave-safe bowl, melt semi-sweet chocolate chips and vegetable oil until smooth, then pour over the caramel layer.
  10. Step 10: Refrigerate for at least 1 hour to set. Lift out of the pan using parchment paper and cut into squares.
