- Step 1: In a large mixing bowl, combine the dark rum and brown sugar. Stir until the sugar is fully dissolved. Add the pineapple rings, ensuring they are submerged in the mixture. Let them soak for at least 30 minutes.
- Step 2: In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually pour in the coconut milk, mixing until you achieve a smooth batter.
- Step 3: In your deep skillet or frying pan, heat about 1-2 inches of vegetable oil over medium heat.
- Step 4: Remove the pineapple rings from the rum mixture, letting any excess liquid drip off. Dip each ring into the batter, ensuring it is fully coated. Carefully place the battered pineapple rings into the hot oil, frying them in batches.
- Step 5: Once fried, use a slotted spoon or tongs to remove the pineapple rings from the oil and place them on a plate lined with paper towels to drain excess oil.
- Step 6: Serve the Rum Soaked Fried Pineapple warm, garnished with fresh mint leaves if desired.
