- Step 1: Preheat your oven to 375°F (190°C).
- Step 2: In a medium saucepan, bring the vegetable broth to a boil. Add the orzo pasta and cook for about 8-10 minutes, or until al dente. Drain and set aside.
- Step 3: In a large mixing bowl, combine the cooked orzo with chopped roasted red peppers, crumbled goat cheese, chopped spinach, halved cherry tomatoes, minced garlic, dried oregano, salt, and black pepper. Mix well.
- Step 4: Grease your baking dish with olive oil. Transfer the orzo mixture into the dish, spreading it out evenly. Drizzle with remaining olive oil and sprinkle grated Parmesan cheese on top.
- Step 5: Place the baking dish in the preheated oven and bake for 25-30 minutes until golden brown and bubbly.
- Step 6: Remove from the oven and let cool for a few minutes. Serve warm, garnished with fresh herbs if desired.
Notes
For a heartier meal, consider adding grilled chicken, shrimp, or chickpeas. This dish can be made vegan by substituting goat cheese with a vegan cheese alternative.
