  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • 1 cup roasted red peppers chopped
  • 1 cup goat cheese crumbled
  • 1 cup spinach chopped
  • 1 cup cherry tomatoes halved
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 cup grated Parmesan cheese
  • 2 tbsp olive oil

Method
 

  1. Step 1: Preheat your oven to 375°F (190°C).
  2. Step 2: In a medium saucepan, bring the vegetable broth to a boil. Add the orzo pasta and cook for about 8-10 minutes, or until al dente. Drain and set aside.
  3. Step 3: In a large mixing bowl, combine the cooked orzo with chopped roasted red peppers, crumbled goat cheese, chopped spinach, halved cherry tomatoes, minced garlic, dried oregano, salt, and black pepper. Mix well.
  4. Step 4: Grease your baking dish with olive oil. Transfer the orzo mixture into the dish, spreading it out evenly. Drizzle with remaining olive oil and sprinkle grated Parmesan cheese on top.
  5. Step 5: Place the baking dish in the preheated oven and bake for 25-30 minutes until golden brown and bubbly.
