Method
 

  1. Step 1: Preheat your oven to 400°F (200°C).
  2. Step 2: Prepare the garlic by cutting off the top about ¼ inch from the top to expose the individual cloves.
  3. Step 3: Drizzle the garlic head with olive oil, wrap it tightly in aluminum foil, and roast in the oven for 30-35 minutes until soft and golden brown.
  4. Step 4: Once roasted, cool slightly, then squeeze the roasted garlic cloves into a mixing bowl.
  5. Step 5: Mix in sour cream, prepared horseradish, lemon juice, and salt and pepper to taste. Whisk until smooth.
  6. Step 6: For best flavor, refrigerate the sauce for at least 30 minutes before serving.

Notes

This sauce can be made ahead of time and stored in the refrigerator for up to one week. It tastes better after the flavors meld for a few hours or overnight.
