Ingredients
  

  • 1 cup fresh rhubarb chopped
  • 2 cups water
  • 1/2 cup sugar adjust to taste
  • 1 tbsp rosewater
  • 1 lemon juice
  • sparkling water
  • fresh mint leaves
  • ice cubes

Method
 

  1. Step 1: In a medium saucepan, combine 1 cup of chopped fresh rhubarb and 2 cups of water. Bring this mixture to a boil over medium-high heat. Once boiling, reduce the heat to a simmer and allow it to cook for about 15 minutes.
  2. Step 2: Use a fine sieve to strain the rhubarb-water mixture into a bowl. Press down on the rhubarb with the back of a spoon to extract as much liquid as possible. Discard the solids left in the sieve.
  3. Step 3: While the rhubarb liquid is still warm, stir in 1/2 cup of sugar until it dissolves completely. Allow the mixture to cool to room temperature.
  4. Step 4: Once the rhubarb mixture has cooled, mix in 1 tablespoon of rosewater and the juice of 1 lemon. Stir well to combine all the flavors.
  5. Step 5: In a serving glass, add ice cubes. Pour the rhubarb mixture into the glass until it’s about halfway full. Top it off with sparkling water.
  6. Step 6: Garnish with fresh mint leaves. Serve immediately and enjoy the delightful blend of flavors!

Notes

For an extra layer of flavor, consider adding a slice of lemon or a few additional pieces of rhubarb as a garnish.
