- Step 1: In a medium saucepan, combine 1 cup of chopped fresh rhubarb and 2 cups of water. Bring this mixture to a boil over medium-high heat. Once boiling, reduce the heat to a simmer and allow it to cook for about 15 minutes.
- Step 2: Use a fine sieve to strain the rhubarb-water mixture into a bowl. Press down on the rhubarb with the back of a spoon to extract as much liquid as possible. Discard the solids left in the sieve.
- Step 3: While the rhubarb liquid is still warm, stir in 1/2 cup of sugar until it dissolves completely. Allow the mixture to cool to room temperature.
- Step 4: Once the rhubarb mixture has cooled, mix in 1 tablespoon of rosewater and the juice of 1 lemon. Stir well to combine all the flavors.
- Step 5: In a serving glass, add ice cubes. Pour the rhubarb mixture into the glass until it’s about halfway full. Top it off with sparkling water.
- Step 6: Garnish with fresh mint leaves. Serve immediately and enjoy the delightful blend of flavors!
Notes
For an extra layer of flavor, consider adding a slice of lemon or a few additional pieces of rhubarb as a garnish.
