- Step 1: Preheat your oven to 350°F (175°C).
- Step 2: Grease and flour a 9x9-inch baking dish.
- Step 3: In a large mixing bowl, combine flour, sugar, butter, baking powder, salt, and egg. Blend until well combined and crumbly.
- Step 4: Press the mixture evenly into the bottom of your prepared baking dish.
- Step 5: In another mixing bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- Step 6: Spread the cream cheese mixture over the crust.
- Step 7: Scatter chopped rhubarb on top of the cream cheese filling.
- Step 8: Bake for 30-35 minutes, or until edges are golden brown and center is set.
- Step 9: Allow to cool completely in the baking dish before cutting.
- Step 10: Cut into squares and serve.
Notes
These bars can be made in advance, stored in the refrigerator, and served chilled. They can also be frozen for longer storage.
