  • 1/2 teaspoon Chili Powder
  • 1/4 teaspoon Cinnamon Ground

Method
 

Instructions
  1. Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. Rinse pumpkin seeds under cold water and pat completely dry with paper towels. Ensure they are thoroughly dry for even roasting.
  3. In a bowl, toss pumpkin seeds with olive oil, maple syrup, salt, pepper, chili powder, and cinnamon. Make sure seeds are evenly coated.
  4. Spread seeds in a single layer on the prepared baking sheet. Avoid overcrowding.
  5. Roast for 20-25 minutes, stirring halfway through, until golden brown and crispy. Watch closely towards the end to prevent burning.
  6. Remove from oven and let cool completely on the baking sheet to crisp further.
  7. Store in an airtight container at room temperature for up to a week.

Notes

For a sweeter treat, increase maple syrup to 2 tablespoons. Feel free to experiment with other spices like garlic powder, cumin, or smoked paprika.
