  • 1 medium (about 1 pound) Delicata Squash Halved lengthwise and seeded
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper Freshly ground, if possible
  • 1 cup Parmesan Cheese Grated
  • 2 tablespoons Fresh Sage Chopped
  • 1 tablespoon Maple Syrup Optional, for added sweetness

Method
 

Instructions
  1. Preheat oven to 400°F (200°C).
  2. Halve the delicata squash lengthwise and use a spoon to remove the seeds and stringy pulp.
  3. Brush the cut sides of the squash with olive oil.
  4. Season the squash with salt and pepper.
  5. Sprinkle the parmesan cheese evenly over the oiled and seasoned squash halves. If using, sprinkle the sage over the parmesan and drizzle with maple syrup.
  6. Place the squash halves, cut-side down, on a baking sheet.
  7. Roast for 30-40 minutes, or until the squash is tender and the Parmesan cheese is golden brown and slightly crispy. Check for doneness with a fork.
  8. Let cool slightly before serving. Enjoy!

Notes

For extra flavor, try adding a sprinkle of red pepper flakes. Leftovers can be stored in the refrigerator for up to 3 days.
