For the Oven Roasted Potatoes
  • 2 lb potatoes Yukon Gold or red potatoes work well
  • 3 tbsp olive oil Extra virgin olive oil adds flavor
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried rosemary
  • 1 tsp salt
  • 0.5 tsp black pepper
  • Fresh parsley (optional)

Method
 

  1. Step 1: Preheat your oven to 425°F (220°C).
  2. Step 2: Wash the potatoes thoroughly, cut them into uniform bite-sized pieces.
  3. Step 3: In a large mixing bowl, combine the potatoes with olive oil, garlic powder, onion powder, dried rosemary, salt, and black pepper. Toss until well-coated.
  4. Step 4: Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
  5. Step 5: Roast the potatoes for 25-30 minutes, stirring halfway through until golden brown and crispy.
  6. Step 6: Garnish with fresh parsley if desired and serve warm.

Notes

For extra crispiness, soak the cut potatoes in cold water for 30 minutes before seasoning. Avoid overcrowding the baking sheet.
