- Step 1: Preheat the oven to 350°F (175°C) and grease and flour your loaf pan.
- Step 2: In a large mixing bowl, combine grated zucchini, vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract. Mix until smooth.
- Step 3: In a separate bowl, whisk together all-purpose flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Step 4: Gradually add dry ingredients to wet mixture, stirring gently until just combined.
- Step 5: If desired, fold in chopped nuts and chocolate chips.
- Step 6: Pour the batter into the prepared loaf pan and smooth the top.
- Step 7: Bake for 50-60 minutes, checking for doneness with a toothpick.
- Step 8: Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
