- Step 1: Preheat your oven to 375°F (190°C).
- Step 2: In a large oven-safe skillet, heat olive oil over medium heat. Add the diced red onion and minced garlic. Sauté for 2-3 minutes, or until the onion is softened and translucent.
- Step 3: Stir in the chopped fresh spinach, cooking for about 2 minutes until it wilts.
- Step 4: Add in the orzo pasta, vegetable broth, dried oregano, dried basil, salt, and pepper. Bring to a boil, then reduce heat and let simmer for about 10 minutes.
- Step 5: Check if the orzo is tender and that most of the liquid has been absorbed. If it’s not quite there, let it simmer for an additional couple of minutes.
- Step 6: Remove from heat and gently stir in the halved cherry tomatoes, sliced Kalamata olives, and crumbled feta cheese.
- Step 7: Transfer the skillet to your preheated oven and bake for 15-20 minutes.
- Step 8: Garnish with fresh parsley if desired, then serve warm.
Notes
Always taste as you go! Adjust the seasoning according to your preference. If you like it spicy, consider adding red pepper flakes.
