- Step 1: Generously season both sides of the ribeye steaks with salt and pepper.
- Step 2: In a large skillet, heat the olive oil over medium-high heat. Once the oil is shimmering, carefully place the steaks in the skillet. Cook for about 4-5 minutes on each side for medium-rare.
- Step 3: Remove the steaks from the skillet and let them rest on a plate, tented with foil to keep warm.
- Step 4: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
- Step 5: Reduce the heat to medium and pour in the heavy cream. Stir in the Dijon mustard and bring the mixture to a gentle simmer.
- Step 6: Slice the rested steaks against the grain into thick slices. Arrange on plates and drizzle the creamy garlic sauce generously on top. Finish with a sprinkle of freshly chopped parsley.
Notes
For a thicker sauce, let it simmer longer, stirring frequently to avoid sticking. You can also use alternative proteins like grilled chicken or portobello mushrooms.
