- Step 1: In a large mixing bowl, combine the chopped honey-roasted peanuts, creamy peanut butter, powdered sugar, vanilla extract, and graham cracker crumbs. Use a spatula or wooden spoon to mix everything together until it is well combined and smooth.
- Step 2: Once your mixture is smooth, transfer it into a greased 8x8-inch baking dish. Using the back of a spatula or your hands, press the mixture evenly into the bottom of the dish.
- Step 3: In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between until the mixture is melted and smooth.
- Step 4: Once the chocolate is melted, carefully pour it over the peanut butter mixture in the baking dish. Use a spatula to spread the chocolate evenly across the surface.
- Step 5: Place the baking dish in the refrigerator and let the bars chill for at least 2 hours, or until firm.
- Step 6: After the bars have chilled, remove them from the refrigerator. Use a sharp knife to cut them into squares.
Notes
Store your bars in an airtight container in the refrigerator. They can last up to a week, but they’re so delicious, they probably won’t last that long!
