  • 1 cup Blanched almonds Finely ground
  • 1 cup Powdered sugar Sifted
  • 1/4 cup + 2 tbsp ml Rosewater or almond extract Start with less rosewater, add more to taste. 60ml total.
  • 1-2 tablespoons Water Add as needed for consistency
  • 1/4 teaspoon Salt
  • as needed Powdered sugar For dusting

Method
 

Instructions
  1. Finely grind blanched almonds in a food processor until a smooth powder forms.
  2. In a large bowl, whisk together ground almonds, powdered sugar, and salt until thoroughly combined.
  3. Gradually add rosewater (or almond extract) and water, 1 tablespoon at a time, mixing well after each addition. The mixture should form a smooth, pliable dough.
  4. Turn the dough out onto a lightly powdered sugar surface and knead for 5-7 minutes until smooth and elastic. Add more powdered sugar if too sticky, or a tiny bit of water if too dry.
  5. Shape the marzipan as desired. It can be formed into balls, figurines, or rolled flat for various uses.
  6. Store the marzipan in an airtight container in the refrigerator to prevent it from drying out. It will last for several weeks.

Notes

For a richer flavor, toast the almonds lightly before grinding. You can add a few drops of food coloring to achieve different colors. Get creative with shaping and decorating your marzipan creations!
