Instructions
- Cook pasta according to package directions until al dente. Reserve about 1/2 cup of pasta water before draining.
- While pasta cooks, heat olive oil in a large skillet over medium heat.
- Add minced garlic and red pepper flakes (if using) to the skillet and cook for 1 minute, or until fragrant. Be careful not to burn the garlic.
- Pour in the crushed tomatoes, salt, and pepper. Bring to a simmer and cook for 10-15 minutes, stirring occasionally, until slightly thickened.
- Add the cooked pasta to the skillet and toss to coat in the tomato sauce. Add a little pasta water if needed to loosen the sauce.
- Stir in half of the Parmesan cheese. Serve immediately, topped with remaining Parmesan cheese and fresh basil (if using).
Notes
For a richer flavor, you can add a tablespoon of butter to the sauce at the end. Feel free to experiment with other vegetables like spinach or mushrooms. Leftovers can be stored in the refrigerator for up to 3 days.
