  • 1 pound Fettuccine Pasta
  • 2 tablespoons Olive Oil
  • 4 cloves Garlic minced
  • 1/2 teaspoon Red Pepper Flakes optional
  • 28 ounces Crushed Tomatoes can
  • 1/2 teaspoon Salt or to taste
  • 1/4 teaspoon Black Pepper freshly ground, or to taste
  • 1/2 cup Parmesan Cheese grated
  • 1/4 cup Fresh Basil chopped, for garnish (optional)

  • Colander
  • Large skillet

Method
 

Instructions
  1. Cook pasta according to package directions until al dente. Reserve about 1/2 cup of pasta water before draining.
  2. While pasta cooks, heat olive oil in a large skillet over medium heat.
  3. Add minced garlic and red pepper flakes (if using) to the skillet and cook for 1 minute, or until fragrant. Be careful not to burn the garlic.
  4. Pour in the crushed tomatoes, salt, and pepper. Bring to a simmer and cook for 10-15 minutes, stirring occasionally, until slightly thickened.
  5. Add the cooked pasta to the skillet and toss to coat in the tomato sauce. Add a little pasta water if needed to loosen the sauce.
  6. Stir in half of the Parmesan cheese. Serve immediately, topped with remaining Parmesan cheese and fresh basil (if using).

Notes

For a richer flavor, you can add a tablespoon of butter to the sauce at the end. Feel free to experiment with other vegetables like spinach or mushrooms. Leftovers can be stored in the refrigerator for up to 3 days.
