  • 1 medium head green cabbage chopped
  • 1 cup cherry tomatoes halved
  • 1 cup shredded carrots
  • 1 cup corn canned or frozen
  • 1 cup black beans rinsed and drained
  • 1 cup Fritos corn chips
  • 1 cup shredded cheddar cheese
  • 1/2 cup red onion finely chopped
  • 1 cup ranch dressing
  • 1 tbsp taco seasoning
  • Salt and pepper

Method
 

  1. Step 1: Chop the cabbage into bite-sized pieces. Use a sharp knife for the best results. Chop the red onion finely to ensure its flavor is well-distributed throughout the salad.
  2. Step 2: Halve the cherry tomatoes and rinse and drain the black beans. If using frozen corn, make sure to thaw it.
  3. Step 3: In a large mixing bowl, combine the chopped cabbage, cherry tomatoes, shredded carrots, corn, black beans, red onion, and shredded cheddar cheese. Mix gently to avoid bruising the vegetables.
  4. Step 4: In a separate bowl, mix the ranch dressing with the taco seasoning until well combined.
  5. Step 5: Pour the dressing over the salad mixture and use a mixing spoon to toss everything gently, ensuring that all ingredients are evenly coated.
  6. Step 6: Just before serving, add the Fritos corn chips to the salad and toss lightly to incorporate them without crushing the chips.
