  • 3 Ripe Peaches peeled and diced
  • 1/2 Red Onion finely chopped
  • 1 Jalapeño Pepper seeded and minced (optional)
  • 1/2 cup Cilantro chopped
  • 1/4 cup Lime Juice
  • 2 tablespoons Honey or agave nectar (adjust to taste)
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black Pepper

Method
 

Instructions
  1. Peel and dice the peaches. Finely chop the red onion and jalapeño (if using). Chop the cilantro.
  2. In a medium bowl, gently combine the diced peaches, red onion, jalapeño, and cilantro.
  3. In a small bowl, whisk together the lime juice, honey (or agave), salt, and pepper.
  4. Pour the lime juice mixture over the peach mixture and stir gently to combine.
  5. Taste and adjust seasonings as needed. Add more lime juice for tartness, or more honey for sweetness.
  6. Let the salsa sit for at least 15 minutes to allow the flavors to meld. This step is optional but recommended.
  7. Serve with tortilla chips, grilled chicken or fish, or as a topping for tacos or burritos.

Notes

For a sweeter salsa, use white peaches. For a spicier salsa, add more jalapeño or a pinch of cayenne pepper. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
