- Peel and dice the peaches. Finely chop the red onion and jalapeño (if using). Chop the cilantro.
- In a medium bowl, gently combine the diced peaches, red onion, jalapeño, and cilantro.
- In a small bowl, whisk together the lime juice, honey (or agave), salt, and pepper.
- Pour the lime juice mixture over the peach mixture and stir gently to combine.
- Taste and adjust seasonings as needed. Add more lime juice for tartness, or more honey for sweetness.
- Let the salsa sit for at least 15 minutes to allow the flavors to meld. This step is optional but recommended.
- Serve with tortilla chips, grilled chicken or fish, or as a topping for tacos or burritos.
Notes
For a sweeter salsa, use white peaches. For a spicier salsa, add more jalapeño or a pinch of cayenne pepper. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
