- Step 1: Start by bringing a large pot of salted water to a boil. Once boiling, add the fresh tortellini and cook according to the package instructions until they reach an al dente texture. This usually takes about 3-5 minutes. Be sure to stir occasionally to prevent sticking.
- Step 2: Once the tortellini is cooked, carefully drain it in a colander. Rinse under cold water to stop the cooking process and cool them down quickly.
- Step 3: While the tortellini cools, take your cherry tomatoes, cucumber, red onion, black olives, and mozzarella balls. Use a sharp knife to halve the cherry tomatoes, dice the cucumber, and finely chop the red onion. Slice the black olives and halve the mozzarella balls. Place all the prepared vegetables in a large mixing bowl.
- Step 4: Once cooled, add the drained tortellini to the bowl of vegetables.
- Step 5: In a separate bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper. Taste the dressing to adjust the seasoning according to your preference.
- Step 6: Pour the dressing over the tortellini and vegetable mixture. Gently toss everything together with a spoon or spatula, ensuring that the dressing evenly coats all ingredients.
- Step 7: For the best taste, cover the salad and refrigerate it for at least 30 minutes. This resting time allows the flavors to meld beautifully.
- Step 8: After chilling, give the salad a quick toss before serving. Garnish with extra fresh basil if desired.
