  • 12 oz fresh tortellini any variety (cheese, spinach, or meat-filled)
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion finely chopped
  • 1/2 cup black olives sliced
  • 1/2 cup mozzarella balls halved
  • 1/4 cup fresh basil chopped
  • 1/4 cup olive oil extra virgin recommended
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste

Method
 

  1. Step 1: Start by bringing a large pot of salted water to a boil. Once boiling, add the fresh tortellini and cook according to the package instructions until they reach an al dente texture. This usually takes about 3-5 minutes. Be sure to stir occasionally to prevent sticking.
  2. Step 2: Once the tortellini is cooked, carefully drain it in a colander. Rinse under cold water to stop the cooking process and cool them down quickly.
  3. Step 3: While the tortellini cools, take your cherry tomatoes, cucumber, red onion, black olives, and mozzarella balls. Use a sharp knife to halve the cherry tomatoes, dice the cucumber, and finely chop the red onion. Slice the black olives and halve the mozzarella balls. Place all the prepared vegetables in a large mixing bowl.
  4. Step 4: Once cooled, add the drained tortellini to the bowl of vegetables.
  5. Step 5: In a separate bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper. Taste the dressing to adjust the seasoning according to your preference.
  6. Step 6: Pour the dressing over the tortellini and vegetable mixture. Gently toss everything together with a spoon or spatula, ensuring that the dressing evenly coats all ingredients.
