  • 1.5 cups grated zucchini about 1 medium zucchini
  • 0.5 cups honey
  • 0.5 cups vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 cups chopped nuts or chocolate chips optional

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C). Grease your 9x5-inch loaf pan with butter or non-stick spray.
  2. Step 2: Grate your zucchini using a box grater and squeeze out excess moisture.
  3. Step 3: In a large mixing bowl, combine grated zucchini, honey, vegetable oil, eggs, and vanilla extract. Whisk until well blended.
  4. Step 4: In another bowl, whisk together all-purpose flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  5. Step 5: Gradually add the dry mixture to the wet mixture, stirring gently. If adding nuts or chocolate chips, fold them in at this stage.
