- Step 1: Preheat your oven to 350°F (175°C). Grease your 9x5-inch loaf pan with butter or non-stick spray.
- Step 2: Grate your zucchini using a box grater and squeeze out excess moisture.
- Step 3: In a large mixing bowl, combine grated zucchini, honey, vegetable oil, eggs, and vanilla extract. Whisk until well blended.
- Step 4: In another bowl, whisk together all-purpose flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Step 5: Gradually add the dry mixture to the wet mixture, stirring gently. If adding nuts or chocolate chips, fold them in at this stage.
- Step 6: Pour the batter into the prepared loaf pan and smooth the top.
- Step 7: Bake for 50-60 minutes, checking for doneness with a toothpick.
- Step 8: Once baked, cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
