- Step 1: Preheat your oven to 350°F (175°C). Grease your 9x5-inch loaf pan with cooking spray or butter.
- Step 2: In a large mixing bowl, combine the grated zucchini, sugar, vegetable oil, eggs, and vanilla extract. Mix thoroughly until well blended.
- Step 3: In a separate medium bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon. Gradually add to the wet mixture and stir gently until just combined.
- Step 4: Fold in the chocolate chips and pour the batter into the prepared loaf pan. Sprinkle reserved chocolate chips on top if desired.
- Step 5: Bake for 50-60 minutes, checking with a toothpick for doneness. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
