Crust Ingredients
  • 1.5 cups All-purpose flour
  • 0.5 cups Rolled oats
  • 0.5 cups Packed light brown sugar
  • 0.5 teaspoon Ground cinnamon
  • 0.25 teaspoon Salt
  • 1 cup Unsalted butter, cold cut into cubes
Filling Ingredients
  • 4 cups Fresh peaches, peeled and sliced (about 4 medium peaches)
  • 0.5 cups Granulated sugar
  • 0.25 cups All-purpose flour
  • 2 tablespoons Lemon juice
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoon Ground nutmeg
Topping Ingredients
  • 0.5 cups All-purpose flour
  • 0.5 cups Packed light brown sugar
  • 0.5 cups Rolled oats
  • 0.5 teaspoon Ground cinnamon
  • 0.25 teaspoon Salt
  • 0.5 cups Unsalted butter, cold cut into cubes

Method
 

Instructions
  1. Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  2. Make the crust: In a large bowl, combine flour, oats, brown sugar, cinnamon, and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Press half of the crumb mixture into the bottom of the prepared pan.
  3. Make the filling: In a separate bowl, gently toss together the sliced peaches, granulated sugar, flour, lemon juice, cinnamon, and nutmeg.
  4. Pour the peach mixture evenly over the crust.
  5. Make the topping: In a medium bowl, combine flour, brown sugar, oats, cinnamon, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  6. Sprinkle the crumb topping evenly over the peach filling.
  7. Bake for 45-50 minutes, or until the topping is golden brown and the filling is bubbly.
  8. Let cool completely in the pan before cutting into bars.

Notes

For a richer flavor, use brown butter in the crust and topping. You can also add a sprinkle of chopped pecans or almonds to the topping for extra crunch.
