- Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
- Make the crust: In a large bowl, combine flour, oats, brown sugar, cinnamon, and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Press half of the crumb mixture into the bottom of the prepared pan.
- Make the filling: In a separate bowl, gently toss together the sliced peaches, granulated sugar, flour, lemon juice, cinnamon, and nutmeg.
- Pour the peach mixture evenly over the crust.
- Make the topping: In a medium bowl, combine flour, brown sugar, oats, cinnamon, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
- Sprinkle the crumb topping evenly over the peach filling.
- Bake for 45-50 minutes, or until the topping is golden brown and the filling is bubbly.
- Let cool completely in the pan before cutting into bars.
Notes
For a richer flavor, use brown butter in the crust and topping. You can also add a sprinkle of chopped pecans or almonds to the topping for extra crunch.
