Method
 

  1. Step 1: Preheat the oven to 350°F (175°C).
  2. Step 2: Grease an 8-inch square baking pan and line it with parchment paper.
  3. Step 3: In a mixing bowl, combine the flour, butter, granulated sugar, brown sugar, salt, and baking powder until it resembles coarse crumbs.
  4. Step 4: Press the mixture into the bottom of the prepared baking pan and bake for 15 minutes or until lightly golden.
  5. Step 5: In a separate bowl, mix together the rhubarb, lemon juice, 1/4 cup sugar, eggs, and lemon zest until well combined.
