Method
- Step 1: Preheat the oven to 350°F (175°C).
- Step 2: Grease an 8-inch square baking pan and line it with parchment paper.
- Step 3: In a mixing bowl, combine the flour, butter, granulated sugar, brown sugar, salt, and baking powder until it resembles coarse crumbs.
- Step 4: Press the mixture into the bottom of the prepared baking pan and bake for 15 minutes or until lightly golden.
- Step 5: In a separate bowl, mix together the rhubarb, lemon juice, 1/4 cup sugar, eggs, and lemon zest until well combined.
- Step 6: Pour the rhubarb filling over the baked crust and spread evenly.
- Step 7: Bake for an additional 25-30 minutes until the filling is set and the top is slightly golden.
- Step 8: Allow to cool completely, then lift out using the parchment paper and cut into squares.
- Step 9: Dust with powdered sugar before serving.
Notes
These bars can be made a day in advance and stored in the refrigerator. They can also be frozen for longer storage.
