- If making pink sugar, combine granulated sugar and red food coloring in a small bowl. Mix until evenly colored. Set aside.
- Cream together butter, granulated sugar, and brown sugar in a large bowl until light and fluffy (use an electric mixer).
- Beat in eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually add dry ingredients to wet ingredients, mixing until just combined. Do not overmix.
- Stir in chocolate chips. If using pink sugar, scoop cookie dough onto prepared baking sheets, leaving space between cookies. Sprinkle with pink sugar.
- Preheat oven to 375°F (190°C). Line baking sheets with parchment paper. Bake for 10-12 minutes, or until edges are golden brown.
- Let cookies cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
Notes
For extra-thick cookies, chill the dough for at least 30 minutes before baking. You can also use different types of chocolate chips or add nuts to the dough.
