  • 1/2 cup Butter
  • 1/2 cup All-Purpose Flour
  • 3 cups Milk Whole milk recommended for creaminess
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 4 cups Shredded Cheddar Cheese
  • 1 cup Shredded Monterey Jack Cheese Optional, for milder flavor
  • 1/2 cup Shredded Parmesan Cheese Optional, for extra sharpness

Method
 

Instructions
  1. Cook macaroni according to package directions until al dente. Drain well and set aside.
  2. In the crock pot, melt butter over low heat. Whisk in flour until smooth.
  3. Gradually whisk in milk until smooth and thickened. Stir in salt and pepper.
  4. Add cheddar, Monterey Jack (if using), and Parmesan cheese (if using). Stir until melted and smooth.
  5. Add cooked macaroni to the cheese sauce. Stir gently to combine.
  6. Cook on low for 2-3 hours, or until heated through and bubbly, stirring occasionally. Add a little more milk if sauce becomes too thick.
  7. Serve immediately. Garnish with extra cheese, bread crumbs, or bacon bits (optional).

Notes

For a richer flavor, use a combination of sharp and mild cheddar cheeses. You can also add cooked vegetables like broccoli or peas for added nutrition.
