  • 2 cups rotini pasta
  • 1 cup cooked, shredded chicken can use leftover or rotisserie chicken
  • 1 cup cherry tomatoes halved
  • 1/2 cup Caesar dressing store-bought or homemade
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup croutons
  • 2 cups romaine lettuce chopped
  • Salt and Pepper
  • Fresh Parsley

Method
 

  1. Step 1: In a large pot, bring water to a boil. Once boiling, add a pinch of salt and the rotini pasta. Cook according to package instructions, usually about 8-10 minutes, until al dente. Stir occasionally to prevent sticking.
  2. Step 2: Once cooked, drain the pasta in a colander. Rinse it under cold water to stop the cooking process and cool it down.
  3. Step 3: In a large mixing bowl, combine the cooled rotini, shredded chicken, halved cherry tomatoes, Caesar dressing, and grated Parmesan cheese. Use a spatula or spoon to mix everything until well combined.
  4. Step 4: Gently fold in the chopped romaine lettuce. Season with salt and pepper to taste.
  5. Step 5: Serve the salad immediately or store it in the refrigerator. Top with croutons for an extra crunch and garnish with fresh parsley, if desired.

Notes
