- Step 1: In a large pot, bring water to a boil. Once boiling, add a pinch of salt and the rotini pasta. Cook according to package instructions, usually about 8-10 minutes, until al dente. Stir occasionally to prevent sticking.
- Step 2: Once cooked, drain the pasta in a colander. Rinse it under cold water to stop the cooking process and cool it down.
- Step 3: In a large mixing bowl, combine the cooled rotini, shredded chicken, halved cherry tomatoes, Caesar dressing, and grated Parmesan cheese. Use a spatula or spoon to mix everything until well combined.
- Step 4: Gently fold in the chopped romaine lettuce. Season with salt and pepper to taste.
- Step 5: Serve the salad immediately or store it in the refrigerator. Top with croutons for an extra crunch and garnish with fresh parsley, if desired.
Notes
This salad can be made a few hours ahead of time. Store it in the refrigerator and add croutons just before serving to keep them crispy.
