  • 8 ounces Cream Cheese softened
  • 1 cup Powdered Sugar
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Peppermint Extract or more, to taste
  • a few drops Green Food Coloring optional
  • 1/2 cup Crushed Candy Canes optional, for rolling

Method
 

Instructions
  1. In a medium bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
  2. Gradually add the powdered sugar, beating on low speed until just combined.
  3. Stir in the vanilla and peppermint extracts. Add a few drops of green food coloring, if desired, and mix until evenly distributed.
  4. Taste and add more peppermint extract if needed.
  5. Roll the mixture into small balls, or use a spoon to drop small mounds onto a piece of wax paper or parchment paper. If rolling into balls, roll them in crushed candy canes.
  6. Refrigerate the mints for at least 30 minutes, or until firm.
  7. Serve chilled and enjoy!

Notes

For stronger peppermint flavor, use peppermint extract and finely crushed candy canes. Store leftover mints in an airtight container in the refrigerator for up to a week.
