- Cook pasta according to package directions. Drain well and rinse with cold water to stop the cooking process.
- In a large bowl, combine the cooked and cooled pasta, Italian dressing, cherry tomatoes, cucumber, red onion, and black olives.

- Stir in mozzarella and Parmesan cheese, if using.

- Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. For best results, chill for 2-4 hours or overnight.
