Ingredients

Main Ingredients
  • 2 Large Oranges
  • 4 cups Water
  • 2 cups Granulated Sugar
  • 1 cup Light Corn Syrup
  • 1 teaspoon Vanilla Extract
  • 1 pound Semisweet Chocolate chopped

Equipment

  • Large saucepan
  • Wire Rack
  • Sharp Knife
  • Double Boiler or Microwave-Safe Bowl

Method

Instructions
  1. Wash oranges thoroughly and slice into 1/8-inch thick rounds. Remove any seeds.
  2. Bring 4 cups of water to a boil. Add orange slices and blanch for 3 minutes to reduce bitterness. Remove and set aside.
  3. In the same saucepan, combine sugar, corn syrup, and 1 cup water. Stir over medium heat until sugar dissolves. Bring to a boil, stirring occasionally.
  4. Add blanched orange slices to the boiling syrup. Reduce heat and simmer for 20-25 minutes, or until translucent and tender, turning occasionally.
  5. Remove slices and place on a wire rack to cool and drain completely (a few hours).
  6. Melt chocolate in a double boiler or microwave. Dip each dry orange slice in melted chocolate, ensuring full coverage.
  7. Place chocolate-covered slices back on the wire rack to set. Once set, store in an airtight container in a cool, dry place.

Notes

For a richer flavor, use dark chocolate. You can also add a pinch of salt to the syrup for a sophisticated touch. These candied oranges make a beautiful and delicious gift!
