- Step 1: Preheat your oven to 350°F (175°C).
- Step 2: In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute.
- Step 3: Stir in the orzo pasta and cook for an additional 2-3 minutes.
- Step 4: Pour in the vegetable broth and milk, then add the dried oregano, salt, and pepper. Bring to a simmer and cook for about 8-10 minutes.
- Step 5: Remove from heat and stir in the mozzarella cheese and half of the Parmesan cheese until melted.
- Step 6: Grease your baking dish, pour the orzo mixture into it, and sprinkle the remaining Parmesan cheese on top.
- Step 7: Bake for 20-25 minutes until the top is golden and bubbly.
- Step 8: Let cool for a few minutes, then garnish with freshly chopped parsley before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat before serving.
