For the Cheesy Baked Orzo
  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • 1 cup milk dairy or non-dairy
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • Salt and pepper
  • Fresh parsley

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute.
  3. Step 3: Stir in the orzo pasta and cook for an additional 2-3 minutes.
  4. Step 4: Pour in the vegetable broth and milk, then add the dried oregano, salt, and pepper. Bring to a simmer and cook for about 8-10 minutes.
  5. Step 5: Remove from heat and stir in the mozzarella cheese and half of the Parmesan cheese until melted.
  6. Step 6: Grease your baking dish, pour the orzo mixture into it, and sprinkle the remaining Parmesan cheese on top.
  7. Step 7: Bake for 20-25 minutes until the top is golden and bubbly.
  8. Step 8: Let cool for a few minutes, then garnish with freshly chopped parsley before serving.
