- Step 1: Preheat your oven to 375°F (190°C).
- Step 2: Cook the orzo pasta according to the package instructions until al dente, about 8-10 minutes. Drain and set aside.
- Step 3: In a large skillet, heat olive oil over medium heat. Add the thinly sliced onions and cook, stirring frequently, for about 20-25 minutes, until caramelized and golden brown.
- Step 4: Stir in the minced garlic and thyme, cooking for an additional 1-2 minutes until fragrant.
- Step 5: In a mixing bowl, combine cooked orzo, caramelized onions, vegetable broth, heavy cream, and 1 cup of Gruyère cheese. Season with salt and pepper to taste.
- Step 6: Transfer the mixture to a greased baking dish.
- Step 7: In a small bowl, combine breadcrumbs and melted butter. Sprinkle the mixture evenly over the orzo.
- Step 8: Top with the remaining ½ cup of Gruyère cheese.
- Step 9: Bake in the preheated oven for 25-30 minutes until the top is golden and bubbly.
- Step 10: Remove from the oven and let cool for a few minutes. Garnish with freshly chopped parsley before serving.
