  • 1 cup orzo pasta
  • 2 tbsp olive oil
  • 2 large onions thinly sliced
  • 2 cloves garlic minced
  • 1 tsp fresh thyme leaves
  • 1 cup vegetable broth
  • 1 cup heavy cream
  • 1.5 cups Gruyère cheese grated
  • ½ cup breadcrumbs
  • 2 tbsp butter melted

Method
 

  1. Step 1: Preheat your oven to 375°F (190°C).
  2. Step 2: Cook the orzo pasta according to the package instructions until al dente, about 8-10 minutes. Drain and set aside.
  3. Step 3: In a large skillet, heat olive oil over medium heat. Add the thinly sliced onions and cook, stirring frequently, for about 20-25 minutes, until caramelized and golden brown.
  4. Step 4: Stir in the minced garlic and thyme, cooking for an additional 1-2 minutes until fragrant.
  5. Step 5: In a mixing bowl, combine cooked orzo, caramelized onions, vegetable broth, heavy cream, and 1 cup of Gruyère cheese. Season with salt and pepper to taste.
  6. Step 6: Transfer the mixture to a greased baking dish.
  7. Step 7: In a small bowl, combine breadcrumbs and melted butter. Sprinkle the mixture evenly over the orzo.
  8. Step 8: Top with the remaining ½ cup of Gruyère cheese.
  9. Step 9: Bake in the preheated oven for 25-30 minutes until the top is golden and bubbly.
