- Step 1: Preheat your oven to 400°F (200°C).
- Step 2: Toss cauliflower florets with olive oil, salt, and black pepper. Spread on a baking sheet and roast for 20-25 minutes.
- Step 3: Cook the orzo pasta in vegetable broth according to package instructions. Drain and set aside.
- Step 4: In a large mixing bowl, combine buffalo sauce, shredded cheese, cream cheese, and Greek yogurt. Stir until well combined.
- Step 5: Add roasted cauliflower and cooked orzo to the cheese mixture. Stir gently to combine.
- Step 6: Transfer the mixture to a greased baking dish and spread evenly.
- Step 7: Bake in the preheated oven for 25-30 minutes, or until bubbly and golden.
- Step 8: Garnish with sliced green onions and chopped parsley before serving.
