- Step 1: Preheat your oven to 425°F (220°C).
- Step 2: In a small bowl, mix together the olive oil, minced garlic, salt, black pepper, rosemary, thyme, and Dijon mustard (if using). Stir until well combined to form a flavorful paste.
- Step 3: Pat the beef tenderloin dry with paper towels. Rub the herb mixture all over the roast.
- Step 4: Transfer the seasoned roast to a rack in a roasting pan.
- Step 5: Place the pan in the preheated oven and roast for 25-30 minutes. Use your meat thermometer to check the internal temperature for medium-rare, aim for 130°F (54°C).
- Step 6: Once the roast reaches the desired temperature, remove it from the oven. Tent it with aluminum foil and let it rest for 15-20 minutes.
- Step 7: After resting, slice the roast into even pieces and serve.
