- Step 1: Preheat your oven to 375°F (190°C).

- Step 3: In a large mixing bowl, combine chopped rhubarb, all-purpose flour, granulated sugar, baking powder, baking soda, salt, and ground cinnamon. Stir until well combined.

- Step 5: Pour the wet mixture into the dry ingredients and stir gently until just combined.

- Step 8: While the fritters are baking, prepare the sweet glaze by whisking together powdered sugar, milk, and vanilla extract in a small bowl until smooth.
