- Wash and thoroughly dry the strawberries. Select the largest, most uniformly shaped strawberries (about 12-15) for the Santas. Cut off the green tops, leaving about 1/4 inch of green stem attached.
- In a medium bowl, beat the softened cream cheese with an electric mixer or a whisk until smooth and creamy. Gradually add the powdered sugar and vanilla extract, beating until well combined and fluffy.
- Spoon a generous amount of the cream cheese mixture onto each strawberry, shaping it into a round Santa belly.
- Attach two miniature chocolate chips to each Santa belly for eyes.
- Break a small pretzel stick in half, and use a small piece to create a mouth for each Santa.
- For best results, refrigerate the Strawberry Santas for at least 30 minutes before serving to firm up the cream cheese. They are also delicious served immediately!
Notes
For a festive touch, you can use red and green sprinkles to add a decorative element to the cream cheese mixture before adding the facial features. You can also use different types of candies or sprinkles to personalize your Strawberry Santas.
