Notes

For the richest flavor, use high-quality unsweetened Dutch-process cocoa powder. If you don't have a sifter, whisk the powdered sugar and cocoa powder thoroughly in a separate bowl before adding them to the mixer to break up any lumps. If stored in the refrigerator, the dip will become very firm; allow it to sit out at room temperature for 10-15 minutes before serving for optimal texture.
